Chicken Salad

Chicken Salad is a delicious, as well as a versatile, recipe. It can also be one of the healthiest recipes you make, if you make it right. Most chicken salad recipes are loaded down with fat simply because of the way the chicken is prepared and the mayonnaise that is used. Ingredients
6 Tyson All-Natural Chicken Tenders
1 tsp Almond Oil (or Olive Oil)
Mrs. Dash Original Seasoning, to taste
Mustard, to taste
Plain Nonfat Yogurt, to taste (optional)
Granulated Garlic, to taste
Cayenne pepper, to taste
1/2 small onion
1/2 small bell pepper

Step 1
You will want to use a small or medium size pan to cook your chicken in. Heat the teaspoon of Almond Oil over a high heat and roll it around in order to coat the entire pan. Reduce to a medium heat and cook your chicken.

Step 2
Once you have cooked you chicken, place it in a food processor and add in the dry seasonings (add in a little at the time, until it is seasoned the way you like it), onion, and pepper. Pulse until the chicken, onion, and pepper are finely chopped (be sure you pulse it, otherwise you will get a chicken mush!).

Step 3
Remove your chopped chicken mix from the food processor and place in a large bowl. Add in your mustard and, if desired, yogurt. Mix together, making sure to coat your entire chicken mix.

Step 4
The chicken salad can be served immediately, but is best if it is left to sit for a few hours or overnight.

A successful weight loss program is not possible unless you can avoid getting hungry. Meals should be no more than 4 to 5 hours apart, and you should carry with you a protein snack for when you begin to feel hungry.

Chicken salad is a very satisfying snack. Always have in your refrigerator some chicken salad, preferably home made, so that you can avoid the “bad fats” that are in most commercial dressings or mayonnaise. Never use salad dressings or oils that contain soy. Soy oil is an Omega 6 oil and responsible for many of the chronic illnesses today. Chicken salad can be taken to work in a thermos container. Two tablespoons of chicken salad, eaten when you begin to feel hungry, will quell the hunger pangs. It is so easy!

Broiled chicken drumsticks are a good snack food, too. I keep chicken drumsticks and chicken salad in my refrigerator at all times. It is an easy bedtime snack, too.

A quick and easy way to make chicken salad is to buy quantities of cooked and diced chicken breast from a Sysco store, supplier of institutional kitchens, and keep it frozen until you need it. It is more expensive than cooking the chicken yourself, but so much easier. And the neat part about it is having a satisfying protein cooked and handy at all times so you don’t snack on the usual high carb snacks that keep us from losing weight.

Here is a recipe for home-made blender mayonnaise to use in your chicken salad. It has none of the “bad” oils you usually find in commercial mayonnaise.

Place in blender:
1 egg
1/4 teaspoon salt
1 teaspoon Dijon mustard
1 cup Fillipo Berio regular olive oil, not virgin or extra virgin (too strong flavor)
1-1/2 Tbsp. vinegar or lemon juice
1 Tbsp. boiling water

Place the egg, salt, mustard, and 1/4 cup olive oil in electric blender. Turn on the motor and add the remaining 3/4 cup oil in a slow thin stream. Add the vinegar or lemon juice and the water. Taste, correct the seasoning and refrigerate until needed.
