Turkey Penne Recipe, with Spinach and Olive Oil
This little gem takes around fifteen minutes to make (after water reaches a boil), and it’s packed with flavor. You can certainly make turkey meatballs, but I’ve found that just browning the turkey in a pan with the other ingredients is equally as effective and shaves at least twenty minutes off of the total prep/cook time. The total cost of this meal comes in around $10, but will most likely be less as the majority of the ingredients are found in most kitchens already. Once again-this is a great opportunity to utilize fresh herbs. Plant some in your garden or grow them in your window!This should make a healthy six servings, depending on how hungry you are.
Servings: About 6 Time: 15 Minutes
Ingredients
1lb. ground turkey
1 box of dry Penne Rigate
1 c. frozen spinach
1 c. shredded mozarrella
½ c. grated parmesan cheese
1 tbls. Garlic powder
2 tbls. Italian seasoning
Salt and Pepper
¼ c. fresh chopped basil (optional)
½ c. olive oil
Directions
Bring a large pot of water to a boil. Add a little salt to the water for additional flavor….As the water heats, brown the ground turkey in a frying pan with a small amount of olive oil-break it up, but not to the point where it doesn’t have a chunky consistency. You don’t want to break it down so far that all you’re left with are tiny meat granules. As it browns, season the turkey with salt and pepper (to taste). When the water reaches a boil, drop your pasta. Add the frozen spinach to the pan with the turkey, letting the liquid cook off. Season the spinach with a little olive oil, and more salt and pepper. When the turkey is cooked through and the spinach is heated (cook it to a dark green; don’t let it turn brown), drain the pasta and return it to the large pot. Empty the contents of your frying pan into the pasta pot.
Drizzle the remaining olive oil onto the pasta until there’s a light coating throughout, mixing well. Next, season the meal with the garlic powder, Italian seasoning, another layer of salt and pepper, fresh basil if you have it, and both cheeses. Mix all ingredients well; the remaining heat will melt the cheese and combine everything together.
Adding a nice spinach salad or mozzarella and tomato garnish will be a nice side dish to accompany this tasty meal.
