If you have a loaf pan, whether it is Paula Deen’s Signature Stoneware loaf pan or just your average everyday loaf pan you have had for years and love, you know there are an abundance of recipes to use. I have used my loaf pan for making anything ranging from meatloaf, casseroles, and to cakes. In this article, I will share my absolute favorite recipe, vanilla pound cake.

Vanilla Pound Cake

For this recipe you will need:

· 3/4 cup unsalted butter, at room temperature
· 3-ounce package cream cheese, at room temperature
· 3/4 teaspoon salt (1/2 teaspoon if you use salted butter)
· 1 1/2 cups sugar
· 1 teaspoon baking powder
· 2 teaspoons vanilla extract
· 1 teaspoon almond extract
· 5 large eggs, at room temperature
· 3 tablespoons milk
· 1 3/4 cups all-purpose flour

First preheat your oven to 350°F. Grease a 9″ x 5″ x 2 3/4″ loaf pan. Make sure to use the correct size pan to avoid overflow. Then take a mixing bowl and add the vanilla and almond extracts, baking powder, sugar, butter, cream cheese and salt. Beat these items all together until the mixture is thorough combined.

Next, add the eggs into this mixture one at a time while beating them very well. Once the last egg has been added, beat the mixture for 3 minutes on a high speed. The batter may take on a curdled like texture, but will gain volume while beating the ingredients. When the eggs have all been added, proceed to add the milk and just stir it in. Then sprinkle the flour in while the mixer is at a low speed. The batter will become dense and smooth. You are now ready to spoon this mixture into your greased pan. Set the loaf pan on top of a baking sheet for easy handling, bake for 60 minutes.

Now take the cake from the oven. The cake will be stiff and possibly clumpy but that is acceptable. It may be tricky trying to assume when the cake is done. Take an instant read thermometer and stick it in the center middle, it should read about 200 degrees F, if it does your cake is done. Let the cake stand in the loaf pan another five minutes and then loosen the edges. Turn the cake out the pan and allow cooling completely on a rack. Once cooled, serve and enjoy!
