Cooking With Maseca Corn Masa Flour
Corn Masa Flour is a whole grain corn that is cooked in a lime solution and ground. It differs from ‘normal’ corn flour in that corn flour is degermed and not cooked. Masa is Spanish for ‘dough’. Corn Masa Flour is typically used to make dough create Latin American dishes, including tortillas, tamales and pupuas, but it can also be used in a wide range of other recipes.
Maseca is a company manufacturing Instant Corn Masa Flour, making the process of producing the dough a very simple one. As such, it has become a popular way of making an ‘alternative’ cornbread. Here’s the recipe:
What you need:
2 Cups of Flour
6 Eggs
1 Can of Condensed milk
1½ Cup of Sugar
2 Tablespoons of baking powder
3 Cups of Cream
1 Cup of Ricotta cheese
1 Tablespoon of Corn oil
What you do:
1) Preheat the oven to 375ºF.
2) In a blender, blend the condensed milk and eggs for approximately 5 minutes.
3) In a bowl add the Maseca Flour, sugar, baking powder, cream, ricotta cheese and corn oil.
4) Whisk with a metal whisk until a creamy mixture is formed.
5) Add the milk and egg mixture and mix well until there are no lumps.
6) Pass the mixture through a strainer and set aside for 10 minutes.
7) Pour the mixture into a previously greased baking pan.
8) Bake for 1 hour.
The perfect alternative cornbread! For a sweeter dish, Corn Masa Flour can be used to make Apple Pie, in this case an ‘open top’ pie.
For the dough you will need:
2 Cups of Flour
1 Cup of Butter
½ Cup of Sugar
For the filling you will need:
1½ Cups of apples cut into cubes
1½ Cup of chopped walnuts
4 Teaspoons of sugar
¼ Teaspoon of cinnamon
¼ Cup of butter
What you do:
1) In a bowl mix the Maseca Flour, butter and sugar until a crumbly mixture is formed.
2) Place the dough in a pie mold pan or tin and make sure you cover the bottom and the sides, pressing the dough firmly into the tin. The surface should be smooth and stick to the mold.
3) Fill the mold with the apples, nuts, sugar, and cinnamon and add a teaspoon of butter for moisture and flavour, cover with aluminium foil and bake for around 30 minutes.
4) Serve with single or double cream or with vanilla ice cream.
The uses of Corn Masa Flour are, as you can see, many and varied. Of course, you may want to go down the Latin American route and produce delicious tortillas for example, which can then be filled with spicy minced beef, peppers, onion and topped with guacamole and / or sour cream.
